Soba Noodle with BBQ Tofu & Veggies
in Peanut Sauce
1 Package Soba Noodles
1 Package Firm Tofu
1 Tablespoon Yellow Miso
1 Tablespoon Soy Sauce
1 1/4 Tablespoons Hot Sauce
1/4 Cup Peanut Butter
1/4 Cup Water
2 Tablespoons Soy Sauce
2 Tablespoons Lime Juice
2 Tablespoons Rice Wine Vinegar
1 teaspoon Hot Sauce
1 teaspoon Vegan Worcestershire Sauce
1 Tablespoon Teriyaki BBQ Sauce
2 Cups Broccoli
1/2 teaspoon Onion Powder
1/2 teaspoon Granulated Garlic
2 Tablespoons Chopped Peanuts
Preheat over to 375 F
Fill a large pot with water for noodles.
For tofu marinade, mix Miso, Soy Sauce & Hot Sauce
Cut Tofu into strips or cubes, toss with marinade to coat.
Place Tofu on a lined baking sheet and Place in oven cooking for 15-20 until tofu turns light brown.
In a large bowl whisk together the Peanut Butter, Water, Soy Sauce, Line, Rice Wine Vinegar, Hot Sauce & Worcestershire Sauce. If itís to thick, you can add more water to thin.
Cut broccoli & steam for 3-5 minutes. Remove from steamer & place on a lined baking sheet. Sprinkle with granulated garlic, onion powder, BBQ sauce & peanuts.
Place in oven, cooking until the edges of the broccoli start to crisp.
Put Soba noodles into boiling water. Follow packaging directions.
Remove from water and toss in the peanut sauce. Add veggie & tofu.
