Mexican Taco Night
Note: It does not always have to be a Tuesday to enjoy this dish☺
*The first step is perfectly cooked Rice (use brown rice, quinoa or any grain and cook in a rice cooker OR use the instant rice that takes only 90 seconds in the microwave)
*Chop Romaine lettuce, nice and crisp
*Salsa or Pico de Gallo
*Shredded purple and green cabbages tossed heavily with Vegan ranch dressing or vegan thousand island dressing (Use either Hampton Creek brand or Follow Your Heart brand) and salt and pepper
*Choose either soy chorizo in a skillet until browned or Mexican Field Roast brand sliced “sausages” (http://fieldroast.com/product/field-roast-sausages/) or any plain vegan beef crumbles and just add a taco seasoning packet!
*Top with sliced avocado and chopped cilantro
*Place rice, romaine lettuce, salsa, cabbage mixture, vegan meat, avocado and cilantro inside corn tortillas (crunchy or soft) OR make it salad style and put tortilla chips on top!
